Vegan Chocolate Ice Cream

It almost took me by surprise when I tried to make a rich, creamy vegan chocolate ice cream.

My first attempt was lacking in dark chocolate flavor. My second attempt came close but lacked a creamy taste.

What about my third try? Total winner.

This is a rich, creamy chocolate flavor that falls somewhere between gelato and ice cream. Get your ice cream maker, kids. We’re doin’ this.

This recipe only requires six ingredients and simple techniques. This recipe is easy to make if you know how to whisk, blend, and pour into an Ice Cream Maker.

This base is made up of cocoa powder, coconut cream, and organic cane Sugar, all whisked together. This is followed by the rich chocolate flavor, which comes from vegan dark chocolate.

Vanilla extract is the last ingredient. It enhances flavor and prevents ice crystals due to the alcohol content. Blend, chill, and then wait until you’re ready to churn.

The ice cream is so rich and chocolatey, and it’s so creamy. It satisfied my craving for the chocolate-flavored ice cream that I used to enjoy in my dairy-eating days.

This is the perfect summer treat for entertaining or snacking. This is best served with fresh strawberries and Coconut Whipped Cream. What if you accidentally drop a brownie in the bowl of ice cream? Bliss.

Ingredients

  • 3/4 cup of water
  • 1 1/4 cups of light coconut cream
  • Cane sugar organic, 1/3 cup
  • Unsweetened cocoa powder, 1/3 cup
  • 1/4 teaspoon sea salt
  • 6 ounces vegan dark chocolate (finely chopped // ~1 cup chopped per 6 ounces)
  • 1/2 tsp pure vanilla extract

Instructions

  • Add your ice-cream churning dish* to the freezer the day before to chill it properly.
  • Prepare your base the same day. In a large pan, combine the coconut milk, sugar, cocoa, and salt with water. Stirring frequently, bring to a low simmer over medium-high heat. Continue cooking and whisking until it reaches low boiling.
  • Add the vanilla and chocolate after removing the pan from the heat. Whisk until melted.
  • Transfer to a bowl and cool in the refrigerator for two hours or until it reaches room temperature. Optional: To remove any graininess, add to a mixer and blend on high for 30 seconds.
  • Add the chilled base to your Ice Cream Maker, and churn it according to the instructions of the manufacturer – approximately 30 minutes until the soft serve looks (see photo).
  • Enjoy the soft serve or transfer it to a dish lined with parchment paper or a loaf pan. Cover securely and freeze until firm, 4-6 hours.
  • Allow to thaw for 10-15 minutes prior to serving. Scoop with a hop scoop. Enjoy within 7-10 Days. Enjoy it with coconut whipped cream and ripe strawberries!
