Soft Gingerbread Cookies With Maple Glaze

Friends, it’s the season! It’s not the time to make dry, crispy, firm gingerbread from which you could literally build tiny homes. Let’s make soft, pillowy gingerbread this season with a recessed center and slightly crisp edges, crackly, open crags, rich molasses, and gingery spice. Roll them in Sugar and bake them to perfection. Then, drizzle them with mapley glaze. Yes? Yes.

Gingerbread is molasses- and ginger-based. Once we get those flavors in the right proportions, who says gingerbread cookies cannot be soft, chewy, crackly, buttery, and crisp in a single bite? The year 2021 will be the one to reinvent” gingerbread” into a cookie we truly, deeply love.

No gingerbread people splatted flat on a pan. This year, go all out. Put on your favorite Christmas music, light your candles, grab your baking sheets and mixing bowls, and get ready for the holidays. Let’s get started.

Enjoyably SOFT Gingerbread Cookies

These spicy-sweet gingerbread pillows are hard to describe. This is not the dark, crisper, peppery gingerbread. These cookies are soft, light, and almost coppery. They have a gingery spice that is virtually melty. The edges are slightly crunchy, and there’s a sprinkle of Sugar on top.

Suppose your family is used to gathering around a floured table with cookie cutters and rolling pins; don’t worry! You may not be stamping little shapes out or fighting with royal icing to make sure that the gingerbread people do not look like scary clowns and drippy icing smiling faces, but will you miss this part? These are the memories that we treasure.

These memories can also be created. Roll the soft ginger dough in the sugary snow. Once they come out of the oven, you can get the perfect half-dip of maple glaze. You can go the extra mile and pipe tiny holly leaves, berries, or sprinkles on top. Then, gather around the oven and see who can smell it first.

Can we also talk about the maple glaze? These are sublime, smooth, and sweet. Just…come on.

  1. Prepare your dough. Cream the butter, Sugar, and egg. Then, add molasses and molasses. Mix in the dry ingredients until you get a soft dough. You can pinch off a small piece to celebrate the holidays. However, do not eat the raw dough.
  2. Roll and Bake. Take a small amount of dough and roll it into balls. Then, take a tiny extra step by gently rolling them in Sugar. Line your baking sheet with parchment paper and bake.
  3. Maple Glaze. Mix all ingredients until smooth. Coat the cookies by dipping one side in. Sprinkles are optional.

These cookies are a real joy. Gingerbread is cozy, merry, and bright. It’s a special treat. Fill your jars and platters for the holidays, gift boxes and care packages, or your kids” eager hands. You can leave them out for Santa or sneak them into the night.

Maple Glaze

  •  One tablespoon of melted butter
  •  One tablespoon Pure Maple syrup
  •  1 1/2 powdered Sugar (180 grams)
  •  2 Tablespoons milk (and just a tiny bit more, if needed)
  •  Pinch of thumb Salt Taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In the bowl of an electric mixer, cream butter and Sugar until fluffy. Add egg and molasses, then mix well.
  3. Add the flour, baking powder, salt and ginger. Mix until soft dough is formed.
  4. Roll in Sugar. Remove from the pan after 9-11 minutes so that they can flatten/sink as they cool.
  5. The maple glaze will be thick. If it is too thick, add one teaspoon of milk at a time until it becomes dippable. We want it to be thick because it will set nicely. Pour the maple glaze over the top of the cooled cookies, then run the edge along the bowl’s side to remove any excess drips. Place the cookies on wax paper and sprinkle with some festive decorations before the glaze hardens.
