Roasted carrots with honey and garlic yogurt sauce

The carrots aren’t the mushy, overly sweet carrots that we remember from past holidays. This is a delicious, warmly spiced roast carrot that’s roasted to perfection. These carrots will be a great side dish this year. Or, you can pile them on your plate and call it (holiday).

This is a great way to add a little smokiness and brightness to the holiday spread. It will not only make it stand out but also cut through all of that buttery richness. This is a fun, festive, and unique take on the savory-sweet vegetables. It’s not simply putting toasted marshmallows on top, which ends up being sweet-sweet. ).

Simple but SO GOOD

Here’s our favorite kind of recipe. It’s fake fancy, but you know it and love it. It’s so easy to make, but it looks stunning when it is plated and served. It has a complex flavor with Cumin, paprika, and warm spices. How is it so delicious?

Also, the spoonfuls with garlicky Greek yogurt are a winner. The tanginess is perfect for the warm-smoky sauce, and it looks so pretty on top of the rainbow carrots. Regular carrots will work just as well, but the rainbow ones are a great eye-catcher.

If pistachios are not your thing, try slivered almonds or another chopped nut of your choice. You can also use slivered nuts or any other chopped nut you like if pistachios are not your thing. If you don’t like cilantro, some chopped fresh parsley will do.

How to make these amazing roasted carrots

The process is so much easier after a bit of peeling/chopping. This will be a great feeling when you are trying to balance time and manage all the mashing, mixing, and resting.

  1. Carrots. Place your peeled (we sometimes also slice them in half, lengthwise) carrots on a baking sheet and drizzle with olive oil. Add your spice mix. Roast for 20 minutes. Yes, for slightly charred sides.
  2. Sauce. Mix the yogurt with olive oil, minced garlic, salt, and pepper.
  3. Drizzle, then serve. After the carrots have been roasted, drizzle the yogurt over them, add a little honey, and sprinkle some chopped pistachios or fresh cilantro. Prepare yourself for some deliciousness.

Ingredients

Roasted carrots:

    •  1 Bag (32 ounces). Rainbow carrots Peeled and sliced
    •  One tablespoon Olive oil
    •  1/4 teaspoon Each of us can benefit from Garlic powder, Onion powder, and Cumin. smoked paprika
    •  Half a teaspoon Salt
    •  1/4 teaspoon Pepper

Yogurt sauce:

    •  1/2 Whole milk Greek yogurt
    •  Half a tablespoon Olive oil

Additional toppings:

Instructions

    1. Preheat the oven to about 450 degrees. Spread out the carrots on a large baking tray. Sprinkle with olive oil. Sprinkle the carrots with the spice mixture, including salt and pepper, in a small bowl. Toss gently the carrots with the oil and seasoning. Roast the carrots for 20 minutes until they are tender and slightly charred on the edges.
    2. Mix the yogurt with olive oil, garlic, and salt and pepper.
    3. Spread the yogurt sauce on top of the carrots. Finish with honey, cilantro, and pistachios.
