Peach Tomato Bruschetta

Bruschetta has long been a favorite appetizer. I enjoy the tomato-based version but also love to add sweet, juicy peaches in the summer. Summer is perfect for the peach and tomato combination.

This is a great appetizer or snack because it is so simple. It’s also a big hit with everyone. You can top the toasted baguette with peach, tomato, and garlic. Add some basil and olive oil, and you’ve got a delicious and beautiful appetizer.

You can also spread the baguette with whipped Feta if you want to go all out. It is worth trying because combining the creamy cheese and the sweet, juicy tomatoes and peaches is simply delicious!

The bruschetta will be a 12/10 if you drizzle it with hot honey or honey that has been heated. This is a summer favorite!

Ingredients

Tomatoes – I prefer grape tomatoes, but regular or cherry tomatoes also work. You can chop them with a knife.

Peaches – Use ripe, juicy peaches to get the best results. Nectarines can also be used.

Olive Oil – drizzled over tomatoes, peaches, and baguette.

Basil – finely chopped.

French baguette – Cut into slices 1/2 inch thick.

Garlic – to brush on the toasted Baguette Slices

Spread the creamy, salted cheese on the baguette slices. The cheese is optional but SO good.

Honey or Hot love for drizzle on top. Love brings out the sweetness of the peaches. You can also use balsamic glazing if you do not want to use honey.

How to make Peach Bruschetta

Preheat oven to 450 degrees F.

Combine the basil, tomatoes, peaches, and one tablespoon of olive oil in a medium-sized bowl.

As they sit, the peaches and tomatoes become more juicy and flavored. While toasting the baguette, keep them at room temp.

Place the baguette on a large baking tray. It may be necessary to use two sheets. Brush the olive oil on the tops and sides of the baguette. Bake the bread slices on the baking sheets for about 5 minutes.

Remove the bread from the oven, and rub the crushed garlic on it. Press the garlic into the bread.

Spread the whipped Cottage Cheese on each slice of bread (or beat Feta if you are using it).

Add peach tomato topping, drizzle honey, and serve. Serve!

1 pint grape tomatoes, chopped

Three medium peaches, diced

1 Tablespoon Olive Oil

Fresh basil, finely chopped (about 2 to 3 tablespoons)

To taste, add Kosher Salt and freshly ground Black Pepper.

French baguette cut into slices of 1/2 inch thickness.

Olive Oil, For Brushing Bread

Two cloves garlic peeled

The best way to enjoy cottage cheese is by whipping it.

Use balsamic glaze or honey (or hot honey) for drizzling.

Instructions

Place the baguette on a large baking tray. It may be necessary to use two sheets. Brush the olive oil on the tops and sides of the baguette. Bake the baking sheets for about 5 minutes until the bread is toasted. Remove the baking sheets from the oven, and rub the crushed garlic on the toasted bread. Press the garlic into the bread.

If using, spread each piece of toast with whipped cottage or feta cheese. Add peach tomato topping, drizzle honey, and top with peach tomatoes. Serve!
