About Mung Beans

For centuries, Indians and Southeast Asians have enjoyed green mung beans. Many Americans are unaware of their existence! You may be more familiar with the stems of Pad Thai in their sprouted state (mung bean seeds). They’re delicious cooked, too!

Mung beans are rich in protein and have many benefits. They also support detoxification and may even be anti-fungal.

Instant Pot Mung Beans

Instant Pot cooking of mung beans is a great way to cook them quickly, without any effort, and with perfectly tender beans.

What you should know about:

  • Ratio = mung beans green: 3 parts of water
  • Cook Time = 3-5 minutes (3 minutes for al dente, 5 minutes for more tender)
  • Release for 10 minutes, then release the remaining pressure

Mung beans are great in soups and curries.

Ingredients

  • 1 cup mung beans (green)
  • Three cups of water (or vegetable stock to add more flavor).

Instructions

  • Stir to avoid sticking. Add the mung bean and water to the instant pot. Pressure cook for 3 to 5 minutes on high (3 minutes al dente and 5 minutes more tender).
  • After the timer has gone off, let it release naturally for 10 minutes. Then, release any remaining tension. Once the steam has escaped, remove the lid carefully and drain off any excess liquid.
  • Enjoy right away in soups, curries, and bowls. Cooled leftovers can be stored in the fridge for up to five days or in the refrigerator for up to one month. Reheat on the stovetop in a pan, adding water as necessary to avoid sticking.
