KUNG PAO CHICKEN LETTUCE WRAPS

This is a low-carb version of a popular takeout! This recipe is so easy to make; it only takes 20 minutes from start to finish!

I’m a carboholic, but I still love lettuce wraps. This is a great way to get some vegetables without feeling bloated or full for the rest of the day. If it only takes 20 minutes to make the most delicious lettuce wraps, then I might be able to give up carbs.

These wraps are a great way to enjoy the flavor of kung-pao chicken if you’re craving Chinese takeout. They only take 20 minutes to prepare. It’s really that simple. You only need to clean one pan.

You’ll also find it cheaper, quicker, and healthier than the grease used in takeout. It’s hard to beat!

Ingredients

  • Olive oil one tablespoon
  • Ground chicken – 1 pound
  • Two cloves garlic, minced
  • One zucchini, diced
  • Water chestnuts whole, 8-ounce can, drained.
  • Green onions thinly sliced
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • One head of butter lettuce
  • 1/4 cup chopped peanuts (optional)

For the SAUCE

  • Reduced sodium soy sauce, three tablespoons
  • Sherry dry, 2 tbsp.
  • One tablespoon of chili garlic sauce
  • One teaspoon of brown sugar
  • Rice vinegar two teaspoons
  • Cornstarch 2 teaspoons
  • Sesame Oil, 1 Teaspoon

Instructions

  • In a small mixing bowl, combine the soy sauce with the dry sherry sauce, chili garlic sauce (or other sauce), brown sugar, rice wine vinegar, cornstarch, and 1/4 cup of water. Set aside.
  • Heat olive oil in a saucepan on medium heat. Add the ground chicken to a saucepan and heat until it is browned. This should take about 3 minutes. Be sure to crumble as you cook. Drain excess fat.
  • Stir in zucchini and garlic until they are softened. This should take about 1-2 mins. Stir the mixture of soy sauce and water until it becomes slightly thicker, approximately 1 minute. Add chestnuts and green onion and stir until they are tender (about 1-2 minutes). Season with salt and black pepper to taste.
  • Serve by spooning several tablespoons into the middle of a leaf of lettuce, taco style, and garnished with roasted peanuts if desired.
