EASY HOMEMADE PESTO

Pesto is no longer available in the store. It’s so simple to make with only five ingredients. It only takes 5 minutes to prepare!

I always seem to have extra basil, so I make pesto every week. With the aid of a food processor, it’s easy to make and requires very few ingredients. A jar of pesto is a great thing to have in the fridge for busy weeknights. You need to cook some pasta, spread on the pesto, and sprinkle some Parmesan. It’s done.

If you’re used store-bought versions of pesto, this homemade version is going to change your life. You can make it thicker or thinner, depending on how you like your pesto. Add more olive oil to reach the desired consistency.

It is also important to note that a food processor works best for this recipe, not a blender. The consistency is not the same when I use a blender. Pine nuts, also known as pignolias, can be expensive, but a small 8-ounce package of pine nuts lasts a lifetime. It gives you an opportunity to make pesto again next time.

Ingredients

  • Fresh basil leaves, 1 cup
  • Three cloves garlic peeled
  • Pine nuts, three tablespoons
  • Parmesan cheese, freshly grated: 1/3 cup
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • 1/3 cup olive oil

Instructions

  • Combine basil, garlic, and pine nuts in a food processor bowl. Season with salt and pepper to taste. Add olive oil slowly to the motor while it is running. Set aside.
  • Store in an airtight jar in the fridge for up to a week.
