Ingredients

  • 1 cup quinoa
  • Reduced sodium soy sauce, two tablespoons
  • Two tablespoons of oyster sauce
  • One tablespoon of fish sauce
  • Sugar 2 teaspoons
  • Optional: 1 teaspoon red chili paste with garlic
  • Green Giant(tm), Sautes Thai Coconut, 10 oz.
  • Can or fresh, 2 cups of diced pineapple
  • Thai basil leaves, 1/4 cup
  • Two tablespoons of peanuts, chopped

Instructions

  • Cook quinoa in a large pan with 2 cups of water according to the package directions. Set aside.
  • Whisk together the soy sauce with the oyster sauce, fish paste, sugar, and red chili powder in a small bowl. Set aside.
  • Cook Green Giant(tm) and Sautes Thai Coconut as per the package instructions.
  • Stir in the pineapple, basil, and quinoa mixture. Stir constantly and cook for 2 minutes, stirring continuously.
  • Serve immediately with peanuts if desired.
