Strawberry Spinach Salad

Strawberry Balsamic dressing

Let’s begin with the dressing. Fresh strawberry balsamic is so good. Blending it up may seem fancy, but it only takes a few minutes! You’re right! Everything goes into the blender, and voilà, you get a gourmet dressing that tastes better than anything from a store.

Add the honey, vinegar, honey, and salt to the blender. Blend until smooth. Set aside.

You can substitute pure maple syrup for love to make the dressing vegan.

The sauce can be stored in the refrigerator for up to five days. Before using, whisk well.

Salad Ingredients

You will need the following ingredients to make this salad:

Spinach – I like to use fresh spinach in this salad, but you can use any greens.

Strawberries – The star of the salad

Avocado- avocado makes every salad better!

Red onions – I love this pop of color.

Feta Cheese- Goat cheese is also a good choice. If you want to make the salad vegan, leave out the cheese.

I love candied pecans in this salad. It’s so good to have a sweet crunch! I make them and store them in a jar on my pantry shelf. You can also use almonds, pistachios, or candied nuts.

Strawberry Spinach Salad Recipe

Once the dressing has been made, it’s time to go!

Place the cheese, candied nuts, spinach, strawberries, and red onion in a large bowl.

Dressing the salad is easy. Just drizzle it on and toss. You can do it!

You can also plate the salads and serve the dressing separately.

Ingredients

Strawberry Dressing

Strawberries, 1 cup chopped

14 cups Olive Oil

Three tablespoons balsamic vinegar

Honey 1 tablespoon

Dijon mustard 1/2 teaspoon

To taste, add Kosher Salt and freshly ground Black Pepper

Strawberry spinach salad

8 ounces of fresh spinach

Strawberry slices 2 cups

One large avocado, sliced

1/4 of a red onion thinly sliced

2/3 cup crumbled goat or feta cheese

Toss in 2/3 cup chopped candied pecans (or pecans)

Instructions

Add the honey, mustard, olive oil, and vinegar to the blender. Then add the strawberries. Blend until smooth. Set aside.

Place the spinach, strawberries, and avocado in a large serving bowl. Add the cheese, pecans, red onion, and pecans. Toss the salad with dressing when ready to serve. You can also plate the salads with the sauce and do it on the side.

Notes

You can also use pecans instead of almonds, walnuts, or pistachios.
