Chia Pudding

Ingredients

Make sure you use fresh chia seeds! I store mine in the refrigerator.

I use vanilla unsweetened almond milk. You can use any milk you like. All milk is acceptable, including coconut, cashew, and hemp.

Pure Maple Syrup – for sweetening the pudding. You can use honey if you do not need to make the recipe vegan.

Pure vanilla extract- just a splash!

Chia Pudding Recipe

Add the chia seed to a jar. Use an 8oz jar. (I also love this jar). This will give you room to add toppings.

Pour the milk on top of the chia seeds. Add maple syrup and vanilla. Combine well.

Let it sit for 15 minutes. Stir until the mixture is well mixed and there are no clumps.

Cover the jar and place it in the fridge for 2 hours or overnight. To get the best results, let the pudding chill overnight.

Remove the pudding from the fridge and give it a good stir when you are ready to serve. If the pudding is thick, add some milk and stir it again.

Add desired toppings.

Toppings

Fresh Fruit – Berries, bananas, peaches, apples, pears, etc.

Granola – for a sweet crunch. Some of my favorite granolas are almond butter granola and granola clusters. I also love chocolate granola and peanut butter.

Coconut – plain or toasted?

Nuts – Almonds, Walnuts, Pistachios or Cashews.

Nut Butter- Add a drizzle of almond or peanut butter to your favorite recipes.

Maple Syrup or Honey – add a touch of sweetness to your dessert!

Hemp Hearts – for an additional boost of protein and healthy fats.

Choc Chips or Chunks – Top with chocolate to make a delectable treat!

Meal Preparation

The chia pudding is a great way to prepare meals in advance. You can plan to make several jars of chia pudding to enjoy throughout the week. You can easily double, quadruple, or even quadruple this recipe.

For a larger batch, instead of using a jar to make it, combine chia seeds with milk, maple syrup, and vanilla extract into a large bowl. Stir well, and allow to sit for 15 minutes. Stir it again to ensure there are no clumps. Store in an airtight container, but I prefer to use individual jars. Put the lids on the jars and place them in the refrigerator.

How to store

Chia pudding can be stored in an airtight container or jar for up to five days. Stir well and add desired toppings just before serving.

Chia pudding can be frozen. Without any toppings can be frozen in a jar. Overnight in the fridge, thaw. Stir, add toppings, and enjoy!

Notes

This recipe yields one serving. You can double, triple, or quadruple this recipe to prepare meals. The chia pudding can be made in individual jars or a large dish and then divided into individual jars. Stir well before placing it in the refrigerator so that the pudding thickens. The pudding can be stored in the refrigerator for up to five days.
