RASPBERRY CHIPOTLE BBQ CHICKEN

Sweet, tangy, and hot… This is a potent flavor combination. Strong sauces like this let you make something otherwise dull or expensive and turn it into a delicious food item. So, tell you that even when you don’t like chicken, you’ll prepare this sauce to serve for something else.

The process of making the sauce takes a few minutes. However, it will need to simmer for about 45 minutes, but it will last well, so you can prepare the sauce ahead of time in case you need to. The sauce is well-stored and can be stored in the refrigerator for two weeks or frozen for 3-4 months. It’s a Raspberry Chipotle BBQ Sauce that is very simple to make and adds flavor to everything you prepare.

I used thighs of chicken to make this delicious sauce, but it is possible to use any meat—ribs and chicken breasts, pork chops, tofu… everything. Let your imagination run wild.

Chipotle peppers with adobo sauce typically come in tiny cans, but I generally only use one pepper at a time, and I have nearly a complete can leftover. I always put the rest in freezers. Cut the peppers and adobe sauce into smaller portions, then put them into freezers.

RASPBERRY CHIPOTLE BBQ CHICKEN

INGREDIENTS

One tablespoon of vegetable oil ($0.03)

Half medium-sized yellow onion ($0.18)

Two cloves of garlic ($0.14)

8 oz can tomato sauce ($0.56)

1 cup jam made of raspberry ($2.23)

1/4 cup cider vinegar ($0.23)

One chipotle + sauce peppers adobo ($0.10)

4 lbs of chicken legs (8 parts) ($6.48)

INSTRUCTIONS

Finely chop the garlic and onion. Then cook them in an oil pan along with vegetable oil on medium-high heat until they become soft (3-5 hours). While cooking, chop one chipotle and reserve one tablespoon of adobo sauce in the container.

Pour the tomato sauce and cider vinegar, raspberry jam, chipotle pepper chopped and adobo sauce garlic, and onions cooked. Mix everything, and then bring it to a boil. Keep simmering for approximately 45 minutes, stirring now and then. Let the sauce cool down after the simmering (it will thicken when it cools).

Remove the skin of the bird and remove any excess fat. The skin should separate from the meat with ease. However, you may need a sharp knife to cut it in certain places. The oven should be preheated to a temperature of 375 degrees.

Make a baking sheet using aluminum foil as well as nonstick cooking spray. Place the thighs of chicken on the tray and cover in BBQ sauce (pour some sauce into a bowl before applying it to the chicken so that the entire batch will not become contaminated by the raw meat).

Put your BBQ bird in the oven to roast for an hour. Pull the chicken out and coat it with sauce 15 and 30 minutes into the cooking time.
