QUICK LEMON GARLIC FISH

I remember making promises (or resolutions) to create and share easy, quick, and simple recipes for 2011. This recipe certainly is a good fit. It takes just 15 minutes to cook, and If you can get vegetables and rice going, you’ll get an extremely healthy and nutritious meal within a quarter of an hour.

I like this recipe too because due to the individual seals or frozen salmon fillets, I can cook one, three, four, or whatever number I want and keep the rest for rainy days (read the day you’ve eaten all of your pizza and enjoy some light “feel healthy” meal). Also, it’s suitable for singles (holla!) who cook for a single.

I employed the miniature food processor (precisely similar to the one shown here) to make the marinade. However, it could be made just as quickly using the help of a knife. Chop the garlic and then add the rest of the ingredients. I also used the miniature George Foreman grill to cook the fish quickly. Some people might be snarky about this old-fashioned infomercial gadget, but it’s precisely the thing you need at times! The fish was perfectly cooked in just three minutes. It wasn’t dry, was not squishy, and had a nice, crisp surface. I’ve used the George Foreman Grill for about ten years, and it’s still excellent. If you don’t own a grill on your countertop and want to cook your fish in a pan, it’s not enjoyable.

QUICK LEMON GARLIC FISH

INGREDIENTS

2 3 oz. tilapia fillets ($1.99)

Fresh parsley, 1/4 bunch ($0.17)

One medium lemon ($0.50)

One clove of garlic ($0.07)

1 tablespoon olive oil($0.11)

1/8 tsp salt ($0.02)

15 cranks of fresh crushed black pepper ($0.03)

INSTRUCTIONS

Rinse the parsley thoroughly, and then take out as much water as you can by shaking the parsley in the sink (hold on to those stems). Remove the leaves from the stems, then place them in a food or food processor. Slice the lemon into two halves, then add the zest and juice from one portion into the food processor. Keep the remaining lemon to use as garnish. Include the garlic and salt, olive oil, and pepper. Then, turn the chopper on until the garlic and parsley are minced finely, and the mix is thoroughly blended.

The fish filets (thawed) in an empty bowl or dish and pour the lemon garlic-parsley mix over them. Make sure that both sides are completely covered. There may be some that run off, but that’s fine. Spray the grill’s the grill with non-stick spray, and heat it for 5 minutes.

Place the fish fillets on the heated grill. Then close the lid, and set the timer to two minutes. Examine the fish after 2 minutes. If you want your fish to be brown, cook it for another minute. Remove the fish carefully from the barbecue (it will be fragile). Serve with more slices of lemon if you like.
