Ingredients
- 1 cup quinoa
- Reduced sodium soy sauce, two tablespoons
- Two tablespoons of oyster sauce
- One tablespoon of fish sauce
- Sugar 2 teaspoons
- Optional: 1 teaspoon red chili paste with garlic
- Green Giant(tm), Sautes Thai Coconut, 10 oz.
- Can or fresh, 2 cups of diced pineapple
- Thai basil leaves, 1/4 cup
- Two tablespoons of peanuts, chopped
Instructions
- Cook quinoa in a large pan with 2 cups of water according to the package directions. Set aside.
- Whisk together the soy sauce with the oyster sauce, fish paste, sugar, and red chili powder in a small bowl. Set aside.
- Cook Green Giant(tm) and Sautes Thai Coconut as per the package instructions.
- Stir in the pineapple, basil, and quinoa mixture. Stir constantly and cook for 2 minutes, stirring continuously.
- Serve immediately with peanuts if desired.
