Stir-fry with Quick Chicken and Broccoli

Simple pantry ingredients are used to make a 20-minute stir fry with noodles. It does not get any easier or faster!

For those hectic weeknights, there’s no better option than a quick noodle stir fry.

You can use any noodle here: fettuccine or spaghetti, angel hair or udon. Really. You can use any.

Add more vegetables to suit your taste. You can add mushrooms, carrots, and peppers. You can substitute the chicken with beef, pork, or tofu.

Stir-frying is a great way to enjoy food. Stir fries? What is the plural form of stir-fry (?)? You can make it with whatever you have in the house.

Ingredients

  • Cut 1 pound of skinless and boneless chicken breasts into 1-inch pieces
  • 12 ounces linguine
  • 16 ounces of broccoli florets
  • Olive oil one tablespoon
  • Fresh parsley leaves, two tablespoons
  • Half a teaspoon of sesame seeds

For the SAUCE

  • 1/4 cup reduced-sodium soy sauce
  • Two tablespoons of oyster sauce
  • One teaspoon of brown sugar, packaged
  • Freshly grated Ginger, 1 Tablespoon
  • Two cloves garlic pressed
  • Sesame Oil, 1 Teaspoon
  • Optional: 1 teaspoon Sriracha (optional).

Instructions

  • In a small mixing bowl, combine the soy sauce with the oyster sauce, brown sauce, Ginger, garlic, and sesame oil. Reserve 2 tablespoons.
  • Combine reserved two tablespoons of soy sauce mixture with chicken in a large mixing bowl; set aside.
  • Cook pasta in a large pot with salted boiling water according to the package directions. Add broccoli to the bank within the last two minutes of cooking. Drain well.
  • Over medium heat, heat olive oil in a large wok or skillet. Add the chicken to the pan and cook for about 2-3 minutes until it turns golden. Stir in the pasta, broccoli, and remaining soy mixture, stirring until heated through. About 2 minutes.
  • Garnish with sesame and parsley if you wish.
