ASIAN JALAPENO CHICKEN

The honey lemon sauce is a delicious sauce to go with the dish.
You can serve this over brown rice, quinoa, or any other grain of your choice. You can also add more vegetables to suit your taste. This recipe is so easy to adapt, and it’s also very versatile!
Ingredients
- One tablespoon of vegetable oil
- Cut 1 pound of skinless and boneless chicken breasts into 1-inch pieces
- Black pepper and Kosher Salt
- Half a teaspoon of sesame seeds
- Fresh cilantro leaves chopped into two tablespoons
For the SAUCE
- One tablespoon cornstarch
- 1/2 cup honey
- Two cloves garlic, minced
- Juice of one lemon
- Reduced sodium soy sauce, two tablespoons
- Apple cider vinegar, one tablespoon
- Sesame Oil, 1 Teaspoon
- Optional: 1 teaspoon Sriracha (optional).
- One jalapeno thinly sliced
Instructions
- Heat vegetable oil in a large skillet on medium-high heat. To taste, season chicken with salt and black pepper. Add the chicken to a skillet and cook for about 2-3 minutes until golden. Remove from heat.
- Combine cornstarch with one tablespoon of water in a small bowl. Set aside.
- Combine honey, garlic, and lemon juice in a small pan over medium heat. Add soy sauce, vinegar, jalapenos, Sriracha, sesame seed oil, and apple cider.
- Bring mixture to a gentle boil, reduce heat, and stir in the cornstarch until it is slightly thickened (about 2-3 minutes). Stir in the chicken.
- Serve immediately. Garnish with sesame and cilantro if desired.
