Bacon-wrapped dates with goat cheese
What a great way to start the day! What are we looking at? This looks to my hungry eyes like bacon-wrapped Medjool Dates: sweet, soft Medjool dates filled with creamy, tangy gorgonzola wrapped in salty and smoky smoked bacon, then baked until crispy-soft.
I started a dinner group years ago. I invited some friends to dinner. We all brought or made something delicious. Then we got very personal by talking about dinner, drinks, and dessert for hours. I then invited everyone back the following month. It’s so much fun to repeat x. Now is the time to do it. Invite, eat, and connect. You’ll be glad you did.
Bacon-wrapped dates are delicious!
My friend brought these dates wrapped in bacon as an appetizer to our first DCM meeting. Sometimes, life can be hard, and I couldn’t come up with a more creative name for the dinner club. Give me a break, guys.
She unwrapped foil from the Bacon Wrapped Date Plate, and then BAM. They vanished. They disappeared.
How much do you enjoy the term plumped-up date? I have mixed feelings here.) Wrapped up in little bite-sized bacon pieces was the perfect three-way combination for our food-crazy group of girls.

Salty/sweet food love affair
The goat cheese is creamy, tangy, and creamy-sweet from the dates.

Since I learned to make them, I have made these approximately one billion and one times for dinner club, date night, holiday parties, or just sitting on the couch on a Friday evening.
These are the easiest snacks to make, but they also look like the most elegant. We love to see the hustle and buzz of LIFE and holidays.
You’re going to love these if you have a mouth that loves cheese, especially melted cheese.
Kitchen Hack Ahead
Okay, pause. Here’s my baking trick.
This is basically me venting my frustration about the bottoms getting crispy bacon while the sides remain chewy bacon. It’s not even cooked, and that’s not acceptable.
My solution is to stick a toothpick into each date and use it to turn them now and then so they are cooked on all sides.
A party with crispy bacon is always better.
Ingredients
- Eight bacon (I prefer thin bacon)
- 16 Dates
- 4 Ounces of goat cheese
- Toothpicks
Instructions
Preheat the oven to 350 degrees Fahrenheit. Cut the dates in half lengthwise to create an opening. Remove the pit.
Use a spoon to stuff a little goat cheese in the cavity of the dates and close them by pressing the sides together.
Slice the bacon in half. Wrap each date in a bacon slice and secure it with a toothpick.
Bake for 10 minutes. Arrange dates evenly on a baking tray with raised edges. Use the toothpicks to flip each date so that it is on its side. Turn the dates over and bake for another 5 to 8 minutes until they are browned as desired. Place the dates on a plate lined with paper towels and allow them to stand for five minutes before serving.
