This recipe makes a classic breakfast waffle. It’s crispy on the outside but tender and light inside. You can make it however you like! You can make Belgian-style waffles or traditional thin waffles with the batter.
Ingredients
Gluten-Free Flour. This recipe uses a premade blend of gluten-free flour. A gluten-free flour blend with xanthan gum and guar gum will yield the best results. The waffles may become dense and heavy without it. Add a teaspoon of xanthan or guar gum to your mix before using it.
Granulated Sugar. Waffles turn brown when you use one tablespoon of granulated.
Baking Powder. Baking flour gives the batter rise and gives waffles a lovely texture.
Use fresh baking powder only. You can test the baking powder to verify its freshness. Mix one teaspoon of baking powder with half a cup of hot water. The mixture should immediately bubble.
Salt. Flavorless gluten-free waffles without salt taste bland Salt is a flavor enhancer. They will have a pleasant flavor with half a teaspoon of Salt. Use table salt (fine Salt). It should be evenly distributed throughout the waffle batter.
Milk. This recipe works with both dairy-free and traditional milk. You can also substitute the milk with buttermilk if you prefer the taste.
Eggs. Two large eggs give waffles their protein structure and a pleasant flavor. See the note below to make the waffles non-egg.
Add a little butter or oil to give the batter some richness. Coconut oil can be melted before being added to the batter.
Vanilla Extract. A little vanilla extract adds a lovely flavor. For extra flavor, you can add 1/4 teaspoon of almond extract.
How to make gluten-free waffles Step-by-Step
Make the batter
This waffle batter can be made in one bowl. Mix the dry ingredients with the gluten-free flour first. This will help distribute the baking powder and Salt evenly throughout gluten-free flour. This is a small but important step that can make a huge difference.
Next, add the eggs and milk. Mix until the batter becomes smooth and thick. I like to use a rubber spatula to scrape the bowl’s sides and bottom. If there is flour stuck in the bowl, you can use this method to mix it into your batter.
Let the batter cool down
Let the batter sit for 10 minutes after it has been mixed. This allows the gluten-free flour to absorb the liquid, making the waffles grittier. Turn on the waffle maker while the batter rests. You should cook gluten-free waffles with a hot iron. Make sure to grease your iron with nonstick cooking spray or brush it with butter, even if you have a nonstick one.
Cook until golden brown
Place the batter in a greased skillet. A waffle iron usually uses about half a cup of batter. Because they are different, you can check the manual to determine how much batter to use.
Cook the waffles till golden brown. The waffles will brown well if you follow the recipe and include dairy and eggs. Waffles without eggs or dairy don’t brown nearly as well. The waffles should be crisp. The waffle maker will determine the cooking time.
Variations
Left: Gluten-free waffle Right: Gluten-free, dairy-free and egg-free waffle. The gluten-free waffle without dairy and eggs is lighter in color.
Waffles that are Gluten-Free or Dairy-Free
You can use your favorite dairy-free milk. Dairy-free waffles may be lighter than milk waffles. Some dairy-free milk brands don’t brown as well as others. (See the photo above. The right side shows a dairy-free and eggless waffle. Note Full-fat coconut milk makes dense, heavy waffles. It’s not my favorite, but it does the job.
Waffles that are gluten-free and egg-free
It is difficult to bake gluten-free or egg-free. This recipe is egg-free, and I am happy to report that it works. The recipe was tested with Bob’s Red Mill Egg Replacement. The batter becomes very thick when made without eggs. The batter will not thicken if you add liquid. Otherwise, the waffles may become gummy. Waffles made without eggs or gluten tend to be heavier than waffles with eggs.
